Contact Our Chef

Chef Mark was born and raised in Southern Illinois, however he did not stay there long. He graduated with honors from Johnson & Wales University in Providence, Rhode Island where he also worked at a few restaurants in the state. After that he then moved on to become the Sous Chef for a catering company in Providence where he was responsible for creating new dishes as well as overseeing all events to make sure they ran smoothly.

Since then he has been traveling all over the United States working in hotels, restaurants and resorts, even traveling from Sun Valley, Idaho to St. Louis, MO and back up to the East Coast.

Some fun facts about Chef Mark:

He is an Eagle Scout, an avid coffee lover and holds his ProChef II Certification from the Culinary Institute of America. Chef Mark trained for weeks before going to San Antonio, Texas for his three day exam that covered everything from Food Science, Healthy Cooking and Garde Manager. Chef Mark is a big longboarding enthusiast, so if you see him skating around campus be sure to wave and say hello!
